Coffee

" Actually, this seems to be the basic need of the human heart in nearly every great crisis--a good cup of hot coffee."

Alexander King

The Ultimate Cup

Great beans play a crucial role in an exhilarating cup of coffee, but do keep in mind all of these factors for maximum enjoyment:

  • Make sure your coffee maker and filter are absolutely clean, as residual coffee oils can result in bitterness.
  • Use freshly drawn cold water or bottled water, because bitter coffee can also result from highly chlorinated or mineral-tasting water.
  • For a full-flavored cup of coffee, use two level tablespoons for six ounces of water. Remember that a standard coffee cup holds six ounces, whereas a mug may hold up to 12 ounces. For stronger coffee, use two level tablespoons for every four ounces, or half cup, of water.
  • If the coffee is acidic, try adding a pinch of salt to the grounds before brewing. Coffee flavor begins to deteriorate just 15 minutes after brewing, as aromatic oils evaporate and a bitter or flat taste sets in. You can retain that first-cup freshness by transferring coffee to a pre-heated (with hot water) thermal carafe.
